Sweet potato toasts - Shop savvy 20-26 July

Sweet potato toast is the newest food trend.
And I think it's pretty cool.

If you don't know about this new breakfast staple, it's sweet potato slices toasted and topped with savoury (avocado) or sweet (banana and honey) accompaniments.
Instead of bread.

I love a good sourdough toast.
I also love sweet potatoes.
And sweet potatoes last longer than fresh bread in the cupboard.
So you can go for sweet potato toasts when you're really in the mood for a toast but you're out of bread at home.
I recommend you try them now whilst sweet potatoes are in season.
(Woolworths are doing $1.90 for 1kg Australian Gold Sweet Potatoes pack).

According to this recipe site, these are the steps to make a good sweet potato toast:
1. Slice sweet potato in to toast-like thickness and put in toaster.
2. Toast twice to ensure the slices are cooked well.
3. Top!

I don't have a toaster so I make mine using a sandwich press.
I microwave the slices for a minute in the microwave, then press in the sandwich press for another minute.
Nice and crunchy on the outside, while soft and sweet inside. Perfect :)
