Recipe: The best CHAI

So we had the coldest July in the last 14 years.

The weekend was surprising warm (25 degrees in winter!)

And yesterday Sydney recorded the coldest morning in the last 5 years.

I think it's time to brew some chai to warm up.

Masala Chai is the name for tea made with a mix of spices and herbs - cinnamon, cloves, cardamon, ginger and peppercorn. Apparently there is no fixed recipe for chai; every family has its own unique concoction. So I've gathered the ingredients I like to make the best chai that I LOVE!  

This one is made with a Japanese tea called Hoji-cha. It's roasted green tea with a robust flavour.

Ingredients (makes 1 cup)
1 Ho-ji cha tea bag  (or 1Tb leaves)
1/2 cups water
1/2 cups milk
1 cinnamon stick
fresh turmeric, grated
fresh ginger, grated
Black pepper
Raw honey

Method:
Combine milk and water in a small pot. Add turmeric, cinnamon stick, and ginger. Put on low-medium heat and gently simmer for 2-3 minutes. Add tea leaves (or bags) and continue to simmer for another 1-2 minutes. Turn off heat. Add in pepper (optional). Swirl in honey.
Enjoy.


I recommend raw honey because of its great anti-septic and anti-inflammatory properties. And most importantly it's tasty :)
