Breakfast Fruit Bread (gluten and dairy free)

I have an annual quest of finding the best Hot Cross Buns in town before Easter.
Each year I visit local bakeries and patisseries to find out The One.
It's all very fun for the first few visits until I start looking for alternatives to those fluffy little buns of happiness.

And that's when I start baking other goods at home.

You may be surprised with the prunes in the ingredients, but pureed prunes are fantastic in producing moist baked goods without adding extra oils.

The bananas and prunes also give enough sweetness to this bread that you don't need to add any sugar or honey or other sweeteners.

So if you are looking for something other than a hot cross bun over the Easter long weekend breakfast, here's a really nice one for you and your family.

Breakfast Fruit Bread

Moist yet fluffy and light with a slight sweet hit.


Ingredients (serves 10)
10 prunes, pitted
2 Tb hot water to soak the prunes
3 ripe bananas
1/3 cup almond milk (normal cow's milk or soy milk will work well too)
1tsp vinegar
1 egg
1.5 cups buckwheat flour
1 tsp bicarb soda (or 2 tsp baking powder)
2 tsp cinnamon

Method

  1. Preheat oven to 200 degrees Celcius. Line baking tin with baking sheet.
  2. Soak prunes in hot water until softened. Transfer to a blender and blend until smooth. Add in the bananas and blend again until well combined to form a creamy mixture. Add milk, vinegar and egg and blend until well combined.
  3. In a separate bowl, combine buckwheat flour, bicarb soda and cinnamon.
  4. Add the blended mixture from Step 1 in to the bowl of Step 2. Fold through the mixture lightly *** no need to mix too well ***
  5. Bake in the oven for 30-35min or until cooked. Insert a skewer in the middle and if it comes out without runny bits then it's done :)
  6. Serve with your choice of condiments.

You can play around with the texture by adding dried fruits for extra chew or nuts for a crunch.

Note: If you are using baking powder and require a strict gluten-free diet, be sure to choose the gluten free baking powder.
